Recently bought a small loaf tin in Woolies.  It is one of Jamie Oliver’s products.  As soon as I saw it I realised it would fit nicely in my 10 inch cast iron camp oven as it is only 7 inches long but nice and deep. Also sit nicely in the Weber BabyQ on a trivet.

Next was to develop some cakes/loaf recipes to fit. 

First up is this date and walnut loaf that I did cook in the oven as I was experimenting with mixture size.  I did think the mixture would be too much for the little tin at first but it turned out just right.

Ingredients
1 cup chopped dates
3/4 cup brown sugar
3 tablespoons butter
1 teaspoon bicarbonate of soda
1 cup boiling water
3/4 cup chopped walnuts
1 1/2 cups self raising flour

Method
Preheat oven to 160C. Grease and line the loaf tin with baking paper.

Put dates, sugar, butter and bicarbonate of soda into a saucepan. Pour over boiling water.  For this use a medium size saucepan as the bicarb foams up a lot.

Heat mixture to a boil and simmer for a couple of minutes. Remove from heat.

Allow to cool for a bit then add the flour and walnuts. Mix flour in until just combined.  Pour into lined loaf tin.

Bake for 45 minutes, or until a skewer comes out clean.

This turned out to be really nice.  One to add to the list of keepers.
