Chinese plum chicken

           Ingredients

chicken drumsticks
375   plum sauce
2 tablespoon soy sauce
1 tablespoon ginger, grated
1 tablespoon vegetable oil
450 gram noodles
2 bunch  bok choy, trimmed
2 spring onions, sliced, to serve
Method
In a bowl, combine chicken, plum sauce, soy and ginger.
Cover and chill 20 minutes.
In a camp oven heat oil on high. Strain marinade from chicken and reserve.
Stir-fry chicken in 3 batches, 2-3 minutes each, until golden.
Add reserved marinade, noodles and choy sum.
Stir-fry 2-3 minutes, until greens are just wilted and sauce has thickened.
Serve topped with spring onion.

DUCK WITH PLUM SAUCE AND WALDORF SALAD

Ingredients
Duck

2 Duck Breasts
Salt and pepper

Sauce
1/2 Cup red wine
1 Tablespoon brandy
1/2 Cinnamon stick
2 Whole cloves
1 Star anise
Juice of half an orange
1/2 Teaspoon dijon mustard
2 Tablespoons cranberry sauce
400 Grams plums, seeded and mashed

Salad
3 Tablespoons whole mayonnaise
1/2 Tablespoon lemon juice
Salt & pepper
1 Medium sweet red apple, cored and diced
1/2 Cup black seedless grapes sliced in half
1/2 cup sliced celery
1/2 Cup chopped walnuts
Lettuce leaves

Method
Duck

Prick the duck skin with a sharp skewer to allow fat to render.  Rub skin with salt and pepper.  Cook ski[n down in camp oven on medium heat for aroun ten minutes to allow fat to render.  Turn over, place lid on camp oven, add coals and cook duck to your liking,  I like it well done.

Sauce
Place wine, brandy and spices i[n small camp oven, bring to the boil and allow to simmer for around 10 minutes until reduced by half.  Add the orange juice and cook for a few more minutes then stir through mustard, lumps and cranberry sauce.

Salad
Whisk together mayonnaise, lemon juice and salt and pepper.  Stir through all other ingredient

To serve, slice duck and spoon over plum sauce.  Serve salad on a bed of lettuce leaves

Meatloaf with Plum Sauce.
500g beef mince
carrot, cauliflower and broccoli veggie rice
Plum sauce
bacon, rind removed, some diced
1 egg
Breadcrumbs
Salt and pepper

reheat oven to 200°C. Grease and line a 10x20cm loaf pan with baking paper.
Combine breadcrumbs, sauce and egg beef and blend then add the mince, diced bacon, carrot, cauliflower and broccoli in the bowl, and combine with the sauce and egg. Season with some salt and pepper.
Line a pan with bacon and transfer the mix to the pan and smooth top. Coat the top with the plum sauce. I added a bit of bacon to the top as well.
Cook both meatloaf for around 45 minutes until meatloaf is cooked through.
I served with fresh vegetables picked from our garden today, beetroot, sweet potato, cabbage and carrots.
