This is another trial recipe using my little 1 litre Jamie Oliver loaf tin.

If you like a nice moist cake with lots of fruit this is it.  It is one of those cakes where the fruit will sink to the bottom. 

We were naughty and just ate near half of it for afternoon tea.

Ingredients
1 ½ cups raising flour
¾ cup white sugar
½ cup milk
¼ cup vegetable oil
1 egg
½ teaspoon vanilla extract
1 ½ cups blueberries ( Either frozen or fresh)

Method
Grease and line a loaf pan.

Mix flour and sugar in a large bowl until combined then stir through the milk, oil, beaten egg and vanilla extract into flour until batter is just blended. Gently fold blueberries into batter and pour into prepared loaf pan.

Bake in the preheated camp oven, Weber style bbq or your RV oven at around 160 to 170 degrees until a skewer inserted into the center comes out clean, around 60 to 70 minutes.
