CHICKEN WITH SPINACH & WHITE BEANS

Ingredients

1/4 cup plain flour
2 tsp smoked paprika
5 chicken thigh cutlets (skin on, bone in)
2 tbsp extra virgin olive oil
1 small brown onion, finely chopped
2 cloves crushed garlic
1 cup chicken stock
8 sprigs fresh thyme, plus extra sprigs to serve
2 fresh bay leaves
1 tbsp lemon juice
1 pack spinach
400g can Cannellini Beans, drained and rinsed

Method
Place flour and paprika in a large plastic bag.  Add chicken and shake to coat all over.

Heat oil in a camp oven over medium-high heat. Cook chicken, for several minutes each side or until browned all over. Transfer to a plate.

Add onion and garlic to camp oven. Cook, stirring, for 2 minutes. Add stock, thyme, bay leaves and lemon juice.

Return chicken to oven. Bring to the boil. Reduce heat to medium-low. Simmer for 30 minutes. Remove and discard bay leaves.

Add spinach and beans. Season with salt and pepper.

Cook for a further 2 minutes or until spinach is just wilted and chicken is cooked completely through.

Sprinkle with extra thyme.

Serve with steamed zucchini and broccolini.

Macaroni Bolognese

Ingredients

Macaroni
Mince
Diced carrot
Diced celery
Diced onion
Can of tomato soup
Grated cheese
Small pouch of mixed herbs

Method

Heat frypan and add mince. Cook for a few minutes stirring regularly, then add all the vegetables. Continue regular stirring and cook for 5. Add tomato soup, herbs, and half a can of water then mix in, reduce heat and simmer for at least half an hour stirring occasionally. In a camp oven, heat some water and then add macaroni and boil until done. Drain water, and add Bolognese mix to pasta. Put back on heat and stir together while reheating. Serve with a garnish of cheese

Slow Cooker Pork Loin
Ingredients
potatoes, halved
carrots, peeled and cut into 1-inch pieces
Onions
boneless pork loin
salt
pepper
1/4 cup honey
1/4 cup balsamic vinegar
1/4 cup chicken stock
1 tablespoon cornflour

Instructions
Place the potatoes, onions and carrots in the bottom of a camp oven. Generously season the pork loin all over with salt and pepper. Place in the camp oven on top of the vegetables.
Place the honey, vinegar, stock, and cornflour in a medium bowl and whisk until smooth. Pour over the pork loin.
Once cooked slice the pork loin and serve with the vegetables and sauce.
