Huevos Rancheros in Mini Camp Ovens (Read 149 times)

Huevos Rancheros (or literally Rancher's Eggs) in mini camp ovens.

Ingredients

2 x Rashers of Smoked Bacon
1/2 An Onion
2 x Ripe Tomatoes
3 x Garlic Cloves
1 x small can of Sweet Corn
1 x small can of Four Bean Mix
2 x Fresh Eggs
Worcestershire Sauce (to taste)
Salt and Pepper (to taste)

Method
Dice up the tomato, onion, garlic and bacon.
Sauté the diced items until the onion is translucent then add the corn and beans. (I do this in a frypan because the mini camp ovens are fiddly, but if you are using a normal camp oven use that).

Cook down over a low heat until the tomato has softened and broken up. About 10 minutes.

Add a splash of Worcestershire Sauce and stir through.

Spoon into the small camp ovens and cook, with the lid on, on a medium heat until the mix is combined and a bit gooey.

Make depression in the top of the mix and crack an egg into each camp oven. Replace the lid and simmer for a few minutes until the eggs are to your liking (runny is best).

Remove from the heat and serve with crusty toast and coffee.
