Now I don’t mind some sushi every now and then but this one caught my eye from Schultes our local Butcher

So it’s International Sushi Day today, here’s a recipe for Bacon Sushi 😱

INGREDIENTS
6 slices bacon, halved
2 Lebanese cucumbers, thinly sliced
2 medium carrots, thinly sliced
1 avocado, sliced
125gm. cream cheese, softened
Sesame seeds, for garnish

DIRECTIONS
Preheat oven to 200Ί. Line a baking tray with aluminum foil and fit it with a cooling rack. Lay bacon halves in an even layer and bake until slightly crisp but still pliable, 11 to 13 minutes.

Meanwhile, cut cucumbers, carrots, and avocado into sections roughly the width of the bacon.

When bacon is cool enough to touch, spread an even layer of cream cheese on each slice. Divide vegetables evenly between the bacon and place on one end. Roll up vegetables tightly.

Garnish with sesame seeds and serve.

That is something different.
When Lesley was well enough to go shopping she would always buy sushi to eat when she got home or sometimes on the way home.
Thanks for the recipe.
regards Kev
