WHITE BEAN SOUP WITH PORK HOCK

Ingredients

1 Pork Hock
375 gms Dried White Beans
Celery Sticks, roughly chopped
Carrots, roughly chopped
3 tsp Crushed Garlic
3 Bay Leaves
1/2 tsp Red Chilli Flakes
Grated Parmesan
Salt & Pepper to taste

Method
Place the pork hock upright on a chopping board. Cut off the rind by sawing downward with a sharp knife. Cut the meat from the bone into large chunks.

In camp oven, combine beans, hock meat and bone, garlic, chilli flakes, bay leaves, carrots, celery and 10 cups of water.  This amount suited my 10 inch camp oven.

Bring to a boil then slow simmer, for about 2 hours or until beans are very tender.

Remove the hock meat and bone from the soup. If there is remaining meat on the bone scrape it off with a fork.

Shred all the meat into bite-sized pieces and return to the soup.  Season with salt and pepper remembering that the hock would have had quite a bit of salt in it.

Serve sprinkled with fresh parmesan cheese.

Lamb Stew

Ingredients

Lamb shank meat
Carrots
Potatoes
Sweet potato
Onions
Garlic
Plain flour
Worcestershire sauce
Vegetable stock cube
Canned tomatoes
Mixed herbs

Method

Remove meat from bone and cut into cubes, coat in flour and put into a hot camp oven, stirring around until starting to brown. Slice the onions, add to CO with a couple of crushed cloves of garlic and stir until starting to become translucent. Add all the other diced vegetables as well as the stock cube, tomatoes, a dash of Worcestershire, herbs and top with water. Cover a simmer, stirring occasionally for a couple of hours, top up water as required. Serve when the sauce the meat is nice and tender, the vegies are soft and the sauce has thickened

Gravy Beef Stew
Ingredients
Gravy Beet
Chorizo
Mushrooms
Tomato paste
Celery
Leek
Potato
Carrot
Shallot
Chicken stock.
Salt and pepper to taste
Method
Brown beef in camp oven, then put beef aside. Fry chorizo in the camp oven before then adding leek, shallots and celery and cook to soften the vegetables. I then add mushrooms, potato and carrots and stock along with some tomato paste. Once it started to simmer, I then returned the beef and let it cook until the heat beads burnt out.
I served with crusty bread and a cold beer.
I used 16 heatbeads on the bottom only and it cooked for around 3 hours in the choffer.
