I soaked sultanas in brandy last year but they were not a big hit with the family.  Also did sultanas in port.  Found them better than brandy but still not as good as rum.

Starting on my Christmas Cake.

A kilogram of mixed dried fruit plus 200 gms chopped semi-dried figs now marinating in about a cup of rum.

I gave up years ago measuring the rum by the tablespoon full.   Roll Eyes

My first two batches of Christmas Rum Balls.

Did something different and made them with coffee flavoured sweetened condensed milk instead of plain sweetened condensed milk.

Ingredients
250g packet of Arnott's Milk Arrowroot biscuits
3 tablespoons cocoa powder
1/2 cup desiccated coconut
395g can sweetened condensed milk (I used coffee flavoured)
3 tablespoons rum
2/3 cup of rum soaked sultanas
(Extra coconut and chocolate sprinkles for finishing)

Method
Whizz the bikkies in a food processor until fine crumb then mix all ingredients together.  If you don’t have a food processor put them in a large clip lock bag and beat the crap out of them. Place in fridge for half hour until firm.

Take a spoonful at a time and roll into a ball then roll in either coconut or chocolate sprinkles.

These are now all tucked up in a corner of the fridge for the rum to fully mature with the fruit
