Picked up a four pack of beef ribs and this is the first time I have ever cooked them.

Ingredients
4 beef short ribs
Salt & pepper
Oil
1 sliced onion
1/2 cup port
1 cup beef stock
1 cup of diced tomato. (I used tinned)

Method
Sauté onion in oil until soft.

Dust beef with salt and pepper and brown in a skillet.

Place half the onion in casserole dish.  Add the port and half the tomatoes and half the stock.  Place meat on top.

Pour over the remaining stock and spread remaining onion and tomato over the beef.

Cover dish with foil.

Alternately you could cook this straight into a camp oven.

Cook for 2 1/2 hours at around 180 degrees, remove the foil and cook for a further 30 minute.

Lovely meal looks good. Thanks for the photos and recipe.
I would however give the bone to the dogs to lick and that  would allow me to lick the plate. Grin Grin Grin
