There are some recipes on here if you search.

Stew I find is a bit of a personal thing.  Often I make them with all the leftover veggies in the fridge.  I like root veggies like Swede, turnip and parsnip.  I like to keep the veggies chunky.

The liquid can be stock, beer or wine or whatever takes your fancy.  I like a bit of port with beef stock as that gives it a rich semi sweet taste.

As Aart said, beans are a good addition as is pearl barley.  I like using beans in lots of things.

Oxtail itself has to be a slow cook as it needs to simmer long enough for the sinew to jelly and the meat fall off the bone.
