Check out a place selling wild meats yesterday and bought some kangaroo filets and venison.

Last night I did the fillets with a coating of kangaroo apple, oldman saltbush and finger lime zest. Had a cast iron pan hot for a nice sear then searved with a salad. Cheers Robert

I have tried and tried but never found a taste for Kangaroo.

I even cooked it in a vindaloo curry once but the game taste was still there.

In saying that, your way of cooking it there looks very nice.

Morning Derek it certainly has a taste of its own, nice every now and then. Was looking for some fresh kangaroo tail but none in stock, need to orde4 it. Cheers Robert

Robert about 30 something years ago a mate of mine was kangaroo shooting up at Olary for a mob called Macro Meats in Adelaide. As far as I know they are still going. Cheers.

I nearly secured a deal with the old Macro Meats Company.  They were going to provide me with game meats and I would promote them during cooking competition.

Unfortunately there were some changes in the company and the deal fell apart.
