Giving full credit to the book for this one.  I followed the recipe completely and it turned out amazing. It reminded me of the old Dutch Fruit Loaves we used to buy.

I do not use their brand of ingredients as found the generally most are the same.

Only thing I will do next time is make the bread rolls not as long and more chunky.

This is one to try for sure.

I use Laucke Wallaby brand bread improver and Laucke Bakers flour.

Bread flour is a much stronger flour although plain flour should be ok.  Not sure there is a replacement for the bread improver.

I tried a variation on this recipe today.  Instead of the sultanas, currants and peel I used a bag of fruit medley.

Totally different taste, a bit sweeter as well, but still delicious.
