Ingredients
Atlantic Salmon (Tasmanian is best)
Potato
Carrot
Baby Spinach Leaves
Eggs
Cooking Cream
Vegetable Stock Powder
Salt
Grated Mozzarella

Method
Ingredient quantities used will depend on the size of the dish or camp oven as this would be great cooked straight in the camp oven.

Cube potato and carrot and part cook for around 7/8 minutes.

Oil the bottom of the dish and spread drained potato and carrot across it.  Add a layer of baby spinach leaves.  Top with cubed salmon.  Sprinkle over with salt to taste.

Beat together cream and eggs (for this one I used 200ml of cream and three eggs) together with the vegetable stock powder and pour over the salmon.

Cover with grated cheese and cook at around 200 degrees for 30 minutes.

This dish was absolutely delicious. The egg and cream sets around the vegetables like a creamy egg sauce.
