I decided that I needed a dumpling recipe for my little 8 inch camp oven that would be enough for the two of us for two nights.

After some mucking around I came up with this one.

INGREDIENTS
Dumplings
2/3 cup self raising flour
20 gms hard butter
2 tablespoons golden syrup
1 tablespoon milk

Sauce
1 cup boiling water
20 gms butter
1/3 cup brown sugar
1/3 cup golden syrup

METHOD
IN a bowl rub the chopped butter into the flour until it resembles course bread crumbs.  Pour in the golden syrup and milk and mix with a knife until you have a very sticky dough.

Place all the sauce ingredients into the camp oven and bring to a nice simmer.  Stir until the sugar has melted.

Drop spoonfuls of dough onto the surface of the sauce.  Place lid on and simmer for 12 minutes.

NOTE: Most recipes tell you to roll the dough into balls and push them below the surface of the sauce.  I find this can cause the dumplings to turn out somewhat rubbery.  Dropping them onto the sauce creates a nice fluffy steamed dumpling.

Also I did use the little butane stove as I expect while travelling this is how we will do a lot of cooking
