Pulled out a camp oven today and cooked this pudding.  It is one I dreamed up but which turned out beautiful. 

Easy recipe in that you just throw all the ingredients in a bowl and mix.

Ingredients
1 1/2 cups self-raising flour
1/2 teaspoon cinnamon
3/4 cup brown sugar
25g butter, melted
3/4 cup milk
1 1/2 cups rum soaked sultanas (I leave mine soak for a week)

Sauce
2 cups boiling water
50g butter
2/3 cup brown sugar

Method
Grease a 10 inch camp oven with butter.  Mix together flour, cinnamon, sugar, butter, milk and sultanas until a smooth thick batter.  Spread batter evenly across base of camp oven.

Mix sauce ingredients together until butter has melted and pour across the back of a large spoon onto the the batter.

Bake at around 180 to 190 degrees for 35 to forty minutes or until top of pudding is set and springs back when poked with a finger.

Next time I will put a dash of rum in the sauce.   Tongue

Feeling quite lucky as Maggie wasn’t overly fussed with it so all portioned out in the fridge ready for me.   Smiley
