I have Jamie Oliver to thank for this recipe.  I haven’t listed the quantities of ingredients as it would depend on the size of your casserole/pie dish but if you read through the recipe you will soon work it out.

Was a very delicious meal and one that Maggie said, “You can do this one again”.

INGREDIENTS
Potatoes
Pork Sausages
Leek
Apple
Mustard
Plain flour
Salt & Pepper
Milk

METHOD
Boil potatoes and mash with salt and pepper and a couple of tablespoons of flour.

Core, peel and dice apple.  Halve and slice leeks.

Cook sausages in a pan until cooked through and browned all over.  Remove sausages from pan and add apple constantly stirring until browned and caramel.  Add leeks to the pan with a dash of water.  Season with salt and pepper.  Cook covered for about 20 minutes until leeks are soft.

Add some a good teaspoon of mustard to the pan, a sprinkle of thyme and a tablespoon of plain flour.  Stir while adding some milk enough to make a nice thick sauce.  Now slice your sausages into 1 cm pieces and stir through the sauce.  Retain one sausage.  Simmer for a few minutes.

Take about two thirds of the potato mash and spread it all over the base of a baking pan.  Pour over the sauce and sausages.

Now with the rest of the mashed potato, spread it out over a sheet of baking paper large enough to cover the top of your pan then gently place over the top of your pie.  Press the sides down with a fork to seal then trim the edges.

Cut the remaining sausage into slices and press into the top of the potato for decoration.

Bake for around 40 minutes at 200 degrees.
