Been making this for ever and when I did a search couldn’t where I had shared the recipe so here it is.

Ingredients
1 kilo shin beef cubed
600 gms ox kidney cubed (I do find however that lamb kidney are much tastier but very hard to get)
1 large onion
1 cup beef stock
1/2 cup port
Good sprinkle of Thyme
Salt & pepper to taste

Method
Now this is real easy.  Throw the lot in a camp oven.  Top it up with a little water to just cover the meat and cook slowly for two to two and a half hours.  Depends how the liquid is left I usually thicken it with a little cornflour.

Serve with vegetables of your choice

Of course one must have steak & kidney pie with some of the leftovers.
