I have for many years water bathed jam preserves and pasta sauce now I decided to try Jarring my food for longer life.

Jarring is the old Australian term for what Americans call canning. So bought myself a 22 litre (23qrt) pressure canner and a few mason jars. After further reading I found out you can use the twist lid jars as long as the original product had been under pressure during manufacturing. This certainly will do it at a better cost.

Had some good chicken carcasses and a collection of chicken bones so after testing the Pressure canner I decided on a chicken stock as my first effort. Made a good stock and then started the process.
20 minutes at 10lb pressure was the target then slowly decrease the pressure until zero.

Done 4 x 500 ml mason jars and 2 x 480 ml kanton twist lid jars. All came out well and sealed, very happy with the result. Cheers

Have looked at these before and often wondered if worthwhile for just the two of us.  Does that mean no need to refrigerate the stock?

Anything jarred correctly should be good for years. My idea is for when we are not well and unable to drive for fresh supplies like the last couple of weeks a quick meal is with in easy reach.

The way the world is going it is good knowledge to have. Cheers

Had a look online and some of those big pressure canners are quite cheap.  Hmmmmmmmm will I???

Make sure you get a induction one can be used on all stove tops.I use the Aldi single hob portable stove first generation, works well enough. May check their next on when on special cheers.
