top looking pie mate! I reckon I'd enjoy the Mulberry version but they tend to be a bit hard to come by up here. Although I have no happy snaps -I mostly enjoy an Apple Pie with cream. I may be a little weird but I don't like it with Cinnamon in the Apple or anything else, just Apples in the pastry and a few cloves pricked in through the top. I made one a few weeks ago but forgot the snaps. Will have to make another one now. Although you asked for favourites, I am also extremely fond of Peach Pies!! All the best Skip |

My fave is any fresh baking. Nothing like the smell of fresh baking at camp.

I often do apple pies too, I ussually flombay the apples in brandy then give them a good dose of sugar,cinnamon & cornflour then into the pie! LK is right cinnamon rolls. Only desert I had a pic handy. I guess I will have to start taking more pictures. Let me know if you want the recipe and I will post it.

Those good old common favourites are hard to beat. Not many men cant be won with a good apple pie :P I havent had mulberries in years either, no trees around these days for the picking ;) Just came back with 4 bottles of whiskey, does that flambe???? I do have some brandy and contreau which I think does. I think I best keep this for an outdoors day, I dont have a good track record with things that flame ::) |

Hear you go.
Jiffy Cinnamon Rolls 2 cups All Purpose flour 2 tbsp. Granulated sugar 4 tsp. Baking Powder 1 tsp. Salt ¼ cup Cold butter or margarine 1 cup Cold Milk 1/3 cup Butter or margarine 1 cup packed brown sugar 3 tsp. cinnamon 1/3 cup Currants or cut up raisins In large bowl put flour, sugar, baking powder and salt. Cut in butter until crumbly. Make a well in center. Pour milk in well. Stir to form soft dough adding a bit more milk if needed. Turn out on lightly floured surface. Knead 8-10 times. Roll into rectangle about 1/3 inch thick and 12 inches long. Line bottom of oven with parchment paper; Cream butter, brown sugar and cinnamon together well. Drop ¼ cup into Dutch oven and spread around. Spread the remaining cinnamon mixture over dough rectangle. Sprinkle currants over top. Roll up as for jelly roll. Mark first then cut into 12 slices. Place cut side down in muffin pan. Bake in 400 deg oven for 20-25 minutes. Turn out on tray when still warm. Makes 12 Glaze: To ½ cup icing sugar, add enough milk or water to make a thin glaze. Drizzle over cinnamon rolls. |

Made several apple pies today folks, I was a bit dissapointed with the results though.
It seems I haven't cleaned the Lodge out well enough and some existing fat or gibbers has smoked up well and contaminated the crust with Roast Lamb smoke-not a good taste,can't let that happen again. All the best Skip |

You mentioned peach pie earlier on. I've made a couple with the recipe out of the 'Bush Cooking' book (Savage & Lewis), less the coconut & have had pleasing results so far. :P I found that the first one was a bit under done, & was nearly like a self saucing pudding ;D but the second one, cooked that little bit longer, turned out better. It is probly not the genuine article as you only layer peaches on the bottom of a dish, then pour the mix over the top (creamed butter/sugar etc), so it ends up a bit cake like on top. That's why ya can get away with it if it's a bit under done ;) Top that off with some custard & possibly some of Micks home made ice cream, it rounds out a meal very nicely. From here on in, I'll have to be taking some photo's. Hooroo for now [smiley=1.gif] PS - If the scrolls taste as good as they look, you're on a real winner there, Wayne. Top job mate. |
