Tandoori Chicken with Corn Bread (Read 3840 times)

The chicken was done on the char grill under a cover with smoke so I guess it isn't quita CO tucker but it could be.
The Corn bread was done in the CO though!!

Tandoori.
Grind dry spices in a pestle & mortar to a powder if not already
as follows.

4 tsp, granulated Garlic
2 tsp, Corriander seed
1 tsp, Tumeric
1 tsp, Paprika
1 tsp, Ginger
1/2 tsp, Chilli powder

Coat chicken in dry ingredients & rub well in, then add plain natural yogurt to give a thick wet paste,
let marinate for a few hrs before cooking in a hot oven or grill.

Corn bread.
make the same as a normal bread but with 50/50 mix of bread flour (or pak) & Corn meal.
So 1/2 flour & 1/2 corn meal.
add heaps of sugar (as corn meal is mostly starch which yeast cannot ferment)
add yeast & slightly less water than normal as the corn meal won't take up as much water as flour will.
let rise (prove) twice as normal & bake hot.

Hey Billy you never cease to amaze me with the tucker you produce.
Not sure I can Black Cat you Mick but I'm gunna try tomorrow. I've got some freeloaders turning up for a roast.  I have a nice rolled leg of wild pig and will inject it with a marinade based on apple juice.
i better not say anything more or I'll hex myself and bugger it up proper Cheesy
