no need to rattle on, these photos speak for them selves.

Take one beef short loin (Rib eye) & trim all fat.
Marinate in sweet red wine, fresh garlic & spring onions for 24hrs.
I put some fresh Sage in the middle & tied it up,
Sear all sides in a screaming hot pan & into a hot CO until core temp is 55C (20 - 30Mins) then rest for same.

The Zuccini & Avacado is stuffed with a Salmon, Mushroom & chives mixed with Ricotta then topped with fresh grated parmason cheese.

Note the Schooner of "home made" stock
