Groundnuts Soup Recipe

Groundnuts soup is very popular in African countries because groundnuts are extensively grown. This soup is very easy to prepare and is in many varieties usually depending on what is served with. Groundnuts soup can be served with boiled Yam, Cocoyam, Plantains, Irish Potatoes, Rice, Bread, etc. In some families kids have this with bread in the morning before going to school.
Soup Recipe for a family of five (could be served at lunch and at supper).
Needs: 1). Two cups of dry groundnuts. 2). 1/2 a kilo of fresh beef, pork, chicken. 3). A small bunch of celery. 4). 1 Onion (optional). 5. 1/4 of a litre of Palm oil. 6). Pepper powder (optional).

Process: 1. Boil the beef, pork or chicken in salty water.
      2. Fry (optional) the groundnuts and grind them into fine powder. Leave dry in a separate bowl.
      3. Slice up the onion.
      4. Marsh up the celery and leave in a small dish but add a little to the boiling meat.
      5. Put the meat aside in a bowl when ready. NB: Do not take out the meat from the water that was used in boiling it. Clean up the pot.
      6. Heat up the palm oil in the pot that was used in boiling the meat. Let the oil bleach losing its red colour. NB: Watch your fire (Some people even like it with the red colour).
      7. Once the oil is well heated to your liking, put the onions into it. Allow the onions to fry for about 3minutes.
      8. Add the meat to the frying onions in the oil.
      9. Add the groundnuts powder and mix them up.
      10. Add more water and the rest of the celery and stir.
      11. Cover the pot and allow to boil. NB: Watch it closely. As it boils the groundnuts will cause the water to foam and rise. If not watched it will overflow and put out your fire. Open the pot from time to time and stir causing the foam to drop but do not reduce the intensity of your fire. Boil on until you obtain soup with thickness of your liking.
       *Very thick groundnuts soup recommended with boiled rice, or bread.
       *Slightly thick soup recommended with yam, cocoyam, cassava, plantains,
       *Watery soup recommended with vegetables.
