When coming back from the bush last week, I dropped into the Jondaryan Woolshed. Had a bit of a look around at some of the Cast Iron on display. Not being very familiar with the ins and outs of old cast iron, nothing got my attention.

However, the tea and damper stall got my interest with Spotted Dog that was on offer.
Basic Damper with dried mixed fruit and mixed spices.
Anybody heard of this before?

Great taste. My basic damper texture is never as good as this gals.
She tells me that she uses a knife to combine the mixture..
No kneading involved.
Says it keeps the air inside the mix.

TBF, I think it was BBC that said in one of his posts to use a knife to mix scone dough/damper and I have done it that way since.

Nice to hear you visited the Jondaryan Woolshed. Just before you get there on the left is St Anne's church-the one made out of flitches well I was married there in 1982. Across the road and up the hill is the homestead of the Woolshed. My mother used to be the cook there for the Rutledge's (owners who gave the Woolshed & land to the managing trust) during the early to mid 70's.

As a young fella I would do work in the Woolshed for Fred Thomas the Farm Manager during shearing time. Fred was a really resourceful man who taught me heaps. There is a small creek running down the back lined with willow trees and boy didn't we pull some fish out of there. In all a very nice place to visit.

We took great interest in that church.
The oldest church in Qld with slab sides and the 2nd oldest in Aus.
Beautiful building and still in use.

The visit to Jondaryan means all the more to me now after your post.
The creek out back had a good waterhole in it just down from crossing.

True story mate ,

The people of the town set up for our wedding with the Woolshed people supplying a newly renovated Cart with White & Chestnut horses garnished with emu plumes. We travelled into town with Police Escort and all the trimmings. We were slicker than rats with a gold tooth.

That 'ol church was full to the beams and there was hundreds standing outside-lucky no-one found my rum stash in the grass under the Bloodwoods! Smiley

Yep a great time for the whole town.

I've been told by many an old timer that when making a damper to aerate the flour through a sieve then add your milk or water and mix it with a round ended knife only until it is blended.
I have an old butter knife I carry just for mixing damper, overdo it and it won't rise as much.... works for me.

That one is a steamed pudding though Muzz and not a damper. 

I have cooked JA's Spotted Dick but not using a cloth as he does.  I used a pudding bowl.  Used to pour warmed up Cocky's Joy on it when cooked.

Actually that recipe is very much like the Spotted Dick Recipe.
