Folks read the thread from BillyBushCook about making Beef Jerky,as a precursor to me making biltong this autumn and winter.

I have given the Jerky a go, it in the fridge now and I will complete tomorrow.

The trick is to pull it out before it dries completely, let it finish in a paper bag!!

BBC, used to make the Coopers Lager, but lately quite partial to the Coopers Draught, during the colder months I will make a black beer, bit of a poor mans guinness.

The jerky got a bit dry, I had it in the oven door open on 50oC for about 2.25 hrs, I will make more this week end but will dry for about 1.5 hrs just with the oven fan on.

Wicked flavour great with cheese & pickles and an ale.

Folks I made another batch on the week end.

250ml Teriyaki Sauce
125 ml Worcestershire Sauce
50ml Peri Peri Spice
30 ml Salt
50 Ml Sugar
25 ml honey
8 splashes Tabasco

Marinated 16 hrs
Dried for 3 hrs in oven at 50oC
Started with a 1.4 kg topside roast, after trimming fat off and drying, I was left with 500g of Product.

I need to be truthful "this was good", my boys cleaned the lot up over the course of Sunday, after which they drank one of Melbourne's dams dry.(a bit thirsty)

Hi Michael,

Excellent job mate, I don't have any fan in mine at all. I have never seen the need for one either. I'm not saying it won't work better just never seen 'em with one.

I have a Batten Holder with a 40 watt light bulb in it to generate enough heat to help dry the Biltong in humid conditions (and I get to eat it sooner).

I know it is work in progress but ensure you cut holes holes for ventilation (the fan might fix this problem)

Very interested to see your progress mate so keep up with the snaps!!
