500 g white fish, eg cod or haddock
3 tbsp (25 g) cornflour
2 tbsp soy sauce
1 shallot (25 g approx)
1.5 litres water
chilli flakes or tabasco sauce (to taste)
a pinch of salt (optional)

1. Wash, skin, and bone the fish and cut them into small pieces.

2. Blend the cornflour with the soy sauce.

3. Coat the fish pieces in the mixture.

4. Skin and chop the shallot.

5. Put the water in a saucepan and heat to boiling point.

6. Add the shallot, seasoned fish, chilli flakes or tabasco sauce and salt, if needed. Re-heat to simmering point and simmer for 15 minutes.
