Was walking through my fruit and veggie shop today and they had these trays of large passionfruit so thought to myself, I could do something with them.

Cooked this in an 8" Lodge camp oven and seemed to be just the right size for the recipe

INGREDIENTS
1 tablespoon softened butter
1/2 cup castor sugar
1 beaten egg
1 cup self raising flour
1/2 cup milk
Pulp of 4 passionfruit
1 cup boiuling water
30 grams melted butter

METHOD
Cream softened butter and sugar, add beaten egg and mix well.  Stir in milk and flour and pour batter into well greased camp oven.

Combine melted butter, passionfruit pulp and hot water then pour gently over batter.

Bake in camp oven for 30 minutes

Here is the prepared mixture ready to cook.
