Irish Soda Bread
350g wheatmeal flour
350g plain white flour
600ml buttermilk
50g lard/butter
6 level tspns cream of tartar
3 level tspns bicarbonate of soda
2 tspns sugar
1 tspn salt
Mix the flours & salt together, rub in the lard/butter & add the bicarbonate of soda, cream of tartar. Pour in the buttermilk & work lightly with hands into dough. Gently shape into a ball & place on a warmed greased baking tray, flatten into a disk 2.5-3cm thick. Cut the disk into quarters & pull then apart so that there is 5-15cm between them, dust lightly with wheatmeal flour. Bake immediately for 30mins in a preheated oven at 230°C.

Your getting really good results Muz.  Hopefully next COG we are at you will do a demo of your favourite.

I would like to watch you, pd and bbc do something all at a different time slot.  I know others do breads well but your more likely to be at a COG I can get to.  Cheesy

I can tell you from personal experience Sundryed does a good damper, nearly as good as me, I think I will have to lift my game as the competition is catching up.

Wheatmeal flour is correct.  It is sold as continental flour in 500g packs. I have only been able to buy it at Coles supermarkets.

Too easy, I work in a big Shopping Centre in Tmba and always go shopping in Coles after my shift!
