Baked Stuffed Potatoes
I have no special recipe as far as ingredients and quantities go Undecided

…..I just made what I had at the time…this is a very versatile recipe …….you cant go wrong. Wink

large potatoes (whatever quantity you will need)…….place in camp oven wrapped in foil for about 2 hours at 220c
When cooked and cooled enough to handle cut off top of potato and scoop out potato leaving about 1 1/2cm inside skin……mash scooped out potato with some butter, sour cream and salt and pepper…..then add cooked bacon, garlic, shallots, grated cheese….you could add anything else that takes your fancy….corn is good as are mushrooms diced, parsley, tomato and different herbs
Spoon mixture back into potato shells ….place a small amount of grated cheese on top of each potato and replace lids and bake in camp oven for approx 1 hour at 200c
