I often go to things this time of year and am asked to take a "small plate of food".   I often take the chorizo tasty bites but found this mock rum ball recipe which turned out rather nice today.  The small mini muffins means you can have a taste without filling up on one food and try out others.

I didnt cook this in the CO but these tins do fit my 12" Camp Oven.


The recipe is under the "more info" heading but if you dont like to use Youtube this is the recipe.

1 3/4 Cups Plain Flour
1/2 cup Sugar
4 tsp baking powder
1/4 cup cocoa powder
1/2 cup coconut plus extra for sprinkling on the top
1/2 tsp salt
1/2 cup raisins or mixed fruit
1/2 cup brown rum (I used op)
2 eggs lightly beaten
1 cup milk
125g melted butter (1/2 cup)

Soak Raisins or fruit at least 2 hours (I left it overnight)
Heat oven to 200C.  Line tins with paper or oil.
Sift flour, cocoa, salt and baking powder into a bowl then mix in coconut and sugar.
In another bowl mix beaten eggs, cooled melted butter and milk and add the fruit and rum to this.
Mix in liquid ingredients to dry all at once folding gently with a fork until just all mixed.
Spoon into tins and sprinkle tops with coconut.
Bake if mini muffins for 10 minutes then test with toothpick which should come out clean.
Ordinary sized muffins test at ten but took me 15.

Glad you like the idea, the next batch I did in jumbo size (6 tray) and the MOTH felt he preferred the smaller size.  In the recipe they used the medium size!!!  Also I think they used raisins whereas I used mixed fruit which we like.

I used OP rum and for me the flavour was great.  I took 4 jumbo ones packaged Chrismassy (I stuck a cherry in the top as well as the sprinkle of coconut) to my girlfriend in hospital and the ladies all enjoyed them.
