My version of Jo Clews 'Sunshine Chicken & Rice' - served with a leafy green salad

 

A gas ring burner was used to brown the chicken in the Hillbilly while Heat Beads were ashing over.
Cast iron skillet used to saute the capsicum and onion before being placed in the bowl with rice and water,
