One of the main meals we cook in the CO is wallaby
Wallaby leg goes in camp oven along with veggies
Add a can of coke
A nice bed of coals under and on top of oven
Leave for 3 hours
The meat falls off the bone, the coke keeps the moisture in meat while caramelising it
Makes nice gravy too

If anyone is planning a trip down to Tasie, wallaby meat is freely available from Coles and Wollies outlets down there. The meat is apparently from a small species of wallaby called a Pademelon which is a very abundant, cute and fury little animal. The meat is tender, fine grained and very tasty. It's particularly suited to stir fry's, stews and most dishes for which you would normally use beef or veal. Tongue
