Has anyone used a spit to cook rabbit?

Yep, many times.
You want two, paired belly in.
Couple of halved onions between them with a bunch of rough chopped herbs (thyme, sage, coriander etc.).
Put the spit rod/prongs between and tie the rabbits on firmly with butchers twine.
Wrap some fatty bacon around and tie with more twine.
Slow rotisserie not too close to the heat, Around 90-100 mins, just don't get them too hot and burn.
A dash of white wine now and then doesn't hurt either.

Are you coming to Alstonville this year, Michael??  If so you better bring a couple of New England rabbits and a spit.  That sounds absolutely amazing.

MikeO had rabbit at the last COG in a fricasse.  Wasn't bad either.

Never been that hungry to have to eat a boot, Undecided  but it seams a lot of people have eated some strange stuff "boots,crap etc" Smiley

Ron, we are members of a WA prospecting group with an annual meet. Limited to 25, bit like a COCIA COG, in fact some are members here also.
Each year a member pics a remote location so there is plenty of good camp cooking, refreshing beverages and many tall tales.
Hopefully a bit of gold too. This will be our 6th trip, a long way to go its usually a 15000km. round trip Huh

Here it is next time I will use the elastic netting that butchers use as you can see by the tying on of the bacon was no boy scout
It was moist and tasty will definitely do it again

Next time I do a bunnie on he spit, I plan on just piercing the skin many times and plenty of basting with seasoned oil.

Love rabbit and the spit one looks good. My wife does a french cream rabbit for me when we can get them.

Yes it is stupid the price for underground mullet. We get ours from the daughters inlaws in Adelaide when we are there. He shoots up in the mallie country,in the  freezer and I turn the portable fridge in the car into a freezer for the return trip. He also makes rabbit pies so we get a few of them as well
