Baked Blueberry Cheesecake (Read 4459 times)

This is my first ever baked cheesecake and naturally first in the camp oven.

Recipe courtesy of BBC Food

Ingredients
175 gm Digestive Biscuits
75 gm Butter
175 gm Blueberries plus extras for decorating
450 gm Philadelphia Cream Cheese
4 Eggs
150 gm Castor Sugar
1 teaspoon Vanilla Essence

Method
Crush biscuits.  Melt butter then mix through crumbs. Press into the base of 23 cm cake tin then sprinkle over blueberries

Mix together cream cheese, eggs, vanilla and sugar until a smooth batter then pour over blueberries

Place in preheated camp oven on a trivet.  Cheesecake recipes say bake at 180 degrees and I find a full ring of Heat Beads on top and 8 under my 12” oven gives that

Bake for 40 minutes or until the cheese mixture is set and slightly brown on top

Remove from camp oven and let sit for about ten minutes.  Run a sharp knife around the inside of cake tin and carefully remove and allow to cool

When cold sprinkle more blueberries on top and dust with icing sugar prior to serving

Camp oven food doesn’t get much better than this
