That is a nice looking meal John.  I have never thought much about using foil containers but would certainly keep things cleaner.

Robert, I bought the roast from Coles, it comes in the tray already. We have just washed the used trays and then we can reuse them.
No, I have not checked the probes accuracy as yet, I was surprised between the differences though.
The probe measures both internal meat and actual oven at the same time, and they both had the some reading at room temperature.
I set the probe for chicken well done and the chicken was perfect.

I have often wondered that because the thermometer is at the top and with the openings at the bottom and sides whether the heat that is trapped in the dome could give off a higher reading than what it actually is.

Use foil trays a lot even in the house oven. If not over dirty will clean and reuse but if a full pork roast normally bin it.

My side tables and tray arrived thinking of another tray for the dirty side of life, enjoy Robert

That is a clever idea.  Might look at that when I get home.

Noticed some rust on my grills the other day so they may get replaced as well when we get back.

I have been using the weber, not as much as I would like though.
A couple of pork roasts that came out well.
And a chicken dish I tried using a recipe from McKenzie’s that I liked as wall.

Baked Chicken with White Beans & Chorizo
Ingredients
Ύ cup McKenzie's White Beans
1 ½ tbsp olive oil
8 chicken thighs, skin on and on the bone
1 onion, finely sliced
120g chorizo, sliced 
2-3 garlic cloves, finely chopped
400g can chopped tomatoes
Ύ cup water To taste,
Salt and pepper Grinder To taste
Green Vegetables to serve.
Directions.
Pre-cook beans to pack directions, set aside.
Heat 1/2 tablespoon of oil in a heavy based pan. Sear each side of chicken until golden. Set aside.
Heat remaining oil in pan and cook the onions, chorizo and garlic for 3-4 minutes. Stir in the tomatoes, water and beans. Simmer for 5 minutes and season well.
Transfer tomato mixture to a baking dish and nestle the chicken pieces on top. Bake at 180oC for 25-30 minutes until chicken is cooked through.
Serve with green vegetables.

I will definitely give that chicken dish a go John however may use a can of Cannellini beans instead of the dried ones.
