Rory picked up first place at the Lismore Show for these sausages so I reckoned they would be great.

Not disappointed in the result however will use less seasoning next time as these were over too salty for us although still well and truly edible. Maggie and I are not big salt eaters.

This was from 1.5kg of chicken thighs with the skin on and bone. You bone the thighs and use everything else including the skin

This gave me 1.33kg of sausages.

As this is Rory’s prize winning recipe I’ll let him post it if he wishes.
