I was rummaging through the freezer and came across my last pack of homemade sausage.  These are beef and red wine.

They were not my best batch by far as they had insufficient fat and were rather course and dry even though the flavour was good.

Thought to myself these will make good meatballs with a nice tomato sauce so that is what I did.

Ingredients
Meat balls from sausages
Diced onion
Diced mushroom
Sliced and chopped zucchini
Small bag spinach leaves
Salt & pepper
Herbs - oregano. Basil & thyme
Can diced tomatoes
Pasta of your choice.  I chose spaghetti.

Method

Cook pasta and set aside.  Save some of the pasta cooking water.

Skin sausages and break into balls.  Fry sausage balls and set aside.  Fry diced onion until soft, add mushrooms and cook until soft, add zucchini and cook until tender.

Add can of tomatoes and stir in salt and pepper and herbs.

Stir through spinach

If more moisture needed add pasta water.

Serve with grated Parmesan cheese.  Of course a beer for me and a wine for her.   Smiley
