Well the Christmas New Year festivities are done and dusted.  Two large pork roasts in the Kettle and this morning a heap of home made snags, some brushed with a Smokey BBQ Sauce.  I had forgotten how good these old things can punch out the goodies.

To make life easier I installed a temperature gauge on the Weber today. $10.98 at the Big Green Shed.   Smiley

Smoked a piece of pickled pork today in the Kettle.  I put two chunks of apple on when I put the meat in and another two an hour later.

Cooked to an internal of 76 degrees.

Was exceptionally nice.  I expect it will be even better cold on sandwiches.

Took a cold slice of the pickled pork up to Maggie in the craft room before and popped it in her mouth.  She said, “Did you buy ham when you were out before?”   The cold smoked pickled pork is that good.   Smiley

Makes nice ham steakes as well.
