My Foodland had pork tenderloin on at $10 kilo so bought a few. Picked three good ones to do the two Guys and a Cooler version of the above.

All rubbed down now vacuumed packed and in the fridge till Wednesday morning. Have to be turned each day and massaged before preparing for the humidity cabinet.

First photo should be the rub ready.

Then the first tenderloin being prepared.

Then all three vacuumed packed for the fridge.

Ok today was the first day with a few free hours. Cleaned bench and prepared the pork tenderloin for hanging. Three photos

No 1 all todays equipment
No 2 pipe for wrapping netting ao7nd Tenderloins. Used a bit of 75mm water pipe for the No 12 netting.
Worked a treat.
No 3. All 3 Calabrian hanging in drying cabinet. Cheers Robert.

Bit of a disaster with this lot with the black mold, believe I had too much white wine on the surface and humidity too high.

Dumped them and had the unit and anything inside cleaned with 8% white vinegar and wiped down a few hours later with distilled water.

Will do a couple more this afternoon, they were on special again. Cheers Robert
