Skip's MeatloafOk, Ingredients as follows
*1 large brown onion, peeled and grated
*Splash of Olive Oil
*1 Garlic Clove crushed, I used 1 Desert spoon of wet pack Garlic
* Bacon (About 250Gr but as much as you want)
*1/2 Kg beef Mince
*375 Gr Pork Mince (You can just use Beef Mince but it will tend to be a bit drier & crumblier)
*2 Tbsp Tomato Sauce
*1 Tbsp Black Sauce--Worcestershire
*1 Egg lightly beaten
*2 1/2 cups breadcrumbs, toasted or fresh Ok, I used Supermarket bought toasted ones.
*1/2 Cup -Parsley (Optional) I .love the stuff
*Grated Tasty Cheese
Method:
Line a Loaf Tin with baking paper with excess hanging out which helps lift the Meatloaf out of the tin when cooked.
Grate the onion as it will blend better with the other ingredients. Place the onion,garlic and about 125gr of chopped bacon into fry pan and cook in olive oil until soft (about 5 minutes)and set aside to cool.
In a bowl combine the beef & pork mince,bacon mixture,tomato & black sauce,egg,2 cups of breadcrumbs & parsley.
Mix well by hand and if it feels a bit wet throw in a few more breadcrumbs this is a very forgiving dish and very hard to bugger up.
Because I dislike dry meatloaf I lined the loaf pan bottom with bacon first and the pressed the mixture into the pan.
Really press it in tight as this step will dictate how easy it is to slice later.
I doubled the mix & made two as this is great, cold on sarnies. You can as I did put veggies in layers throughout or sundried tomato or hot salami or anything else you have, or like the taste of.
Brush the top with some tomato sauce or BBQ sauce. Mix the grated cheese with the rest of the breadcrumbs and press into the top of the loaf.
Bake in CO at the standard 180 Deg C for about 1 hour or until firm. Let rest in pan for about 10 minutes then lift out onto cutting board and slice.
I like mine with Baked veggies & Gravy but is also nice with salad.
