Duck Breast In Soy, Balsamic and Cranberry Sauce. (Read 2279 times)

Still cooking inside as fire restrictions still on and t was 35 degrees at 5.00 pm.

Two duck breasts marinated in soy sauce and five spice powder for about half an hour.  Into the oven for 15 minutes.

Sauce is 1/2 cup honey, 1/4 cup balsamic vinegar and 1/2 cup whole cranberry sauce.  Simmer until it starts to thicken.

Slice duck thinly (it should be rare) and add to sauce.  Cook until duck changes colour.

I served it with baked potato and butternut pumpkin and steamed broccoli.

Was absolutely delicious.

Murray, bought these two yesterday at Aldi.  Frozen size 22 for $14.99 each.

These are nice big ducks at 2.2 kg.

What was missing is that I didn’t have any duck fat to cook the veggies.

I also found a recipe for a sauce made from port and cherries.  Shocked Shocked

Aldi had glazed cherries marked down the other day thinking
Lesley might cook a Christmas cake but I see there are a few missing from the packet. Shocked Shocked No worries I see IGA have them on special this week. Love any glazed fruit.

Bonnie won't buy glazed cherries as they have no keeping ability.  Roll Eyes
I saw duck breasts on the Woolworths on line shopping page the other day. I did think about getting some, but I am the only one who likes duck.

The recipe used black preserved cherries in a jar as well as the juice.

Woollies has had fresh duck breast for a while now at $14 a pack of two but last week they were 30% off so I now have a few in the freezer.

Duck breasts have been $10 for two at Woolies for ages so we have been having it sometimes twice a week.

This is the same duck dish but served with mash and silverbeet.

I reckon it would also be great with rice and some steamed bok choy.
