Thought I would try a squarish loaf in my deep loaf tin.  Came out pretty good.

Take 2.  I wanted extra dough to properly fill the little deep bread tin so added an extra half a cup of flour.  Visually added a little bit extra of all the other ingredients.

Worked out pretty well.  Amazes me how the original knob of dough expends.

The photos are in sequence.

Next time hopefully a whole grain loaf.

So you are stretching and turning the bowl 4 times, rest and repeat 3 times.

Have you made a good pizza dough? Cheers

Yes, three times.

I have found that the best pizza dough is self raising flour and Greek yoghurt. Just mix quantities until you have nice dry dough.

Apparently the Pull & Stretch is very 2024.  Slap and Fold is the in thing now.

I actually have no idea what it is but it's all the rage for gluten development with those sour dough folk.
