Following on from yesterdays post here is a photo of the loaf with the crust cut off.

As you can see the crumb is dense and heavy which was no big surprise.

Still edible though and won’t be wasted.  Good for toast and avocado.   Smiley

Bet I won’t do that again.   Grin

I changed my flour brand albeit not deliberately.  Woolies had no Defiance in the 5 kilo bags so I bought a bag of Wallaby made by Laucke.

First try today and looking good.

Today I think I made one of my best, if not the best, loaf of bread.

Nothing that I have done different just a change in flour from Defiance Breadbaking Flour to the Laucke Wallaby Brand.

First thing I noticed was the higher rise in the bowl, then while it was cooking the oven rise caused dough to squeeze out of the top of the loaf pan.  Then the crumb was as soft as you would ever get in a white bread.

Very happy however I think I have convinced myself that I need some commer cial quality bread tins as the ones I have just don’t cut it and forever sticking.
