Yep, I actually did that once Muzz to add some extra fat.  I like pork belly dishes and it is often too fatty to do anything with. 

Was in Costco once and they had full pork bellies that looked like they would have been good for bacon.

Wow that is a lot of fat on a chop.  About the right ratio I am finding is about 1/3 fat t 2/3 meat.  That looks a lot more fat than that.
